I’m glad to be back. I missed my kids. It’s fun to have my own thing, to feel like I’m developing professionally, making connections, & learning a ton, but, there’s no place like home & being with family. Being a mom is the best job in the world. Hands down.
With that, let’s get to today’s post:
First, Day 1 of BlogHer was jam-packed & I met so many amazing people. Like: Catherine of Weelicious, Christine of Cook the Story, Kat, the Vegan Valley Girl, Melanie of Nutritious Eats, April of Gluten is my %!*!, & too many other fab women to list here. Day 2 was a bit more slow-paced. A more detailed recap of conference in another post, but for now, here are a few pics from Day 2. My friend, Adina, took the pictures of me as we took a walking tour of downtown before we went to lunch on Saturday at a little Tex-Mex joint.
I was so glad I was wearing a very comfy swing & sway skirt. Comfortable yet classy. When it’s not raining, Seattle is such a fantastic city for walking & browsing. Love the modern architecture, eclectic shops, hills & the fact there’s nearly always a refreshing breeze.
As soon as I got home yesterday from the BlogHer conference, my heart leapt as I walked through the door & heard my kid’s voices. Salem was the first to greet me. “Mommy, babies. Babies.” She kept repeating as she pat her chest, which is her signal for me to nurse her. Oh believe me, nurse her I did. Pumping does not deliver the kind of relief that nursing does, & after 2 days, I was ready for the real thing. I hugged & kissed each one of my kids & thought, this is real. This is what it’s all about.
After spending the weekend talking about food, I came home with a renewed committment to really involving my kids in the cooking process & do more of my own recipe developement. This morning Asher & Mali helped me make some gluten-free waffles (my own recipe) topped with chia whipped “cream” & fresh strawberries (alas, not from my FIL’s garden, but nearly as good since they are in season right now).
Waffles are probably one of my kids favorite foods & I think they’re pretty great too. They are fun to make & everyone can personalize their waffle by customizing their toppings to fit their tastes. Hyrum never wants earth balance, Asher always does. Asher never wants any whipped cream, Hyrum always does. With Mali, we never know what she wants (must be a girl, huh?).
We made the waffles with this non-stick Belgian waffle iron, one of the best I’ve ever used. Makes perfect waffles every time!
