Fresh Strawberries & Non-dairy Lemon Creme

Is it possible to experience bliss in less than 5 minutes?

I think so.

This little dessert can be whipped up in 5 minutes, or less and will amaze your taste buds–I dare say even take you to a place of bliss, even if it’s just for a moment.

Strawberries are in season in California (which isn’t too far away from these parts) so I’m starting to see the great deals on strawberries ($1-$1.50/lb. is a great deal in my book).

With all the strawberries on hand, I like to utilize them in desserts, without blending or pureeing them. I will sometimes, but I think half the beauty of the strawberry lies in it’s unique texture. A robust, piquant flavor, combined with a firm texture and fruity aroma–what more could one want from a strawberry? It leaves little to be desired.
The only thing that could make such a strawberry better, is a little creme.
The creme I whipped up has the addition of lemon zest, juice & extract which gives it the flavor of a lemon creme pie.
Lemon creme pie with strawberries? Why not?
I think you’ll find it a blissful experience.
Fresh Strawberries & Vegan Lemon Creme

Serves 4
GF, SF
  • 1 pound strawberries (about 2 cups), washed & halved
  • 3/4 c. raw cashews
  • 1/4 c. agave nectar
  • 2 TBS. Stevia in the Raw (or additional agave)
  • 1-3 TBS. water (less, if you use additional agave instead of Stevia in the Raw)
  • 1/2 tsp. pure vanilla
  • 1/4 tsp. pure lemon extract
  • Juice & zest of 2 lemons
In blender (I used my Blendtec, and did 1/2 a cycle on the syrup setting), combine cashews, agave, stevia, water, and lemon juice. Blend until very smooth. Add vanilla and lemon extracts. Stir in half the zest.
In dessert cups, place 1/2 c. strawberries. Spoon 2-3 TBS. of cashew creme over strawberries. Garnish with remaining lemon zest and eat immediately.
Tip: If you have leftover creme, try it spread over your fave whole grain cracker, rice cake, or as a dip for apple slices. Yum.
