We have been traveling this past week. On the road, it takes a bit of planning and some ingenuity to keep eating “kosher,” as my husband says, but it can be done and is well worth it, because eating badly while traveling can really mess with your body’s processes, if you know what I mean…
Here’s what I packed for the road: my high-fiber apple-hemp muffins (I promise I will post the recipe soon, they are AMAZING), cut up watermelon, popcorn, carrot sticks, sugar snap peas, apples, lots of filtered water. I also packed some salad, left-over chili and tortillas to make wraps.
It’s so much cheaper to pack your own food, but sometimes you just have to eat out. When we did eat out, we found two great places:
We ate out at a Mongolian Grill–lots of veggies to choose from, tofu, 3 different types of noodles, tofu, and delicious gingery/spicy sauces sans the MSG.
Another great find on the road was a vegan pizzeria. I was in absolute heaven! I really had no idea what to order because everything on the menu was vegan. I’m used to taking my time creating my own dish, questioning the waiter (do your noodles have eggs, is the broth a vegetable broth or chicken?, ect.) and then further dictating orders for how I want my food so as to assure its veganness. Nothing like going into a restaurant and knowing that I have dozens and dozens of delicious 100% vegan foods at my fingertips. Once I finally hunkered down and made a decision (the ex-meat lover’s pizza or the garden supreme???) I was fraught with thoughts of, what if I don’t like it? and should I have ordered something different?
As soon as I got my pizza though, all thoughts of possible buyer’s remorse were washed away. The oven baked crust was crispy, yet soft inside, topped with a creamy garlic sauce, spinach, tomatoes, onions, field roast (a delicious brand of “grain” meat) basil, and vegan soy cheese. This really was a treat for me, since I rarely go to a restaurant and think that food is terrific. Usually I end up thinking, “I could have made this so much better myself,” or “I would have added this or this if I made it myself,” or “If I would have made this at home it would of cost pennies, but instead I’m paying an arm and a leg for this!” Instead it was exactly what I wanted and I didn’t have to do any cooking and I didn’t have any thoughts of regret.
