My birthday was last week, and since then it has non-stop action in our house. So I apologize for not posting for a few days.
Here were a few (food) highlights of my birthday:
Waffles…ahh, sweet bliss. Perfect birth-day, or really any day food, in my opinion. This recipe was a creation of my own and included brown rice flour, almond butter, chia seeds….tasted crispy on the outside, fluffy and hot on the inside. I topped with a pear compote, blueberries (I try to throw them in somehow nearly every morning for breakfast), and homemade almond rice cream.
My husband took me out for dinner on my birthday. I chose a Thai restaurant, and ordered pineapple coconut curry. Very rich, but it was amazingly flavorful, and I felt appropriate for such an occasion. I know I have yet to post on eating out, but I must say here, I really don’t do it frequently (usually once or twice a month at most), and usually opt for lighter dishes.
We had a small family party and I made a chocolate cake with chocolate hazelnut frosting (which didn’t actually contain hazelnuts, but rather hazelnut flavoring, as we have nut allergies in our house). I made four layers, and the filling was a carmel sauce (made from rice milk & sucanant). And before any one of you start feeling sorry for me because I made my own cake, stop it right now. There are few things I enjoy more than making desserts, especially pretty desserts, like cake.
Yes, this cake was oil, gluten, nut, soy, dairy, and refined sugar free.
