Here’s some of the food we’ve eaten lately:
Green Split Pea Soup. Probably my favorite soup next to a hearty chili.
Tonight’s dinner.
This was Asher’s plate: mashed sweet potatoes, curried brown rice, red lentil & cauliflower salad, with a green salad topped with pumpkin seeds and mock ranch.
We usually have pretty low-key breakfasts: cooked whole-grains like oatmeal or cracked wheat with fruit, smoothies, or toast with fruit salad. On the weekends though, we like to make pancakes, waffles, crepes, or french toast. This morning we made blueberry carob pancakes topped with bananas, blueberries, and a carob sauce I made out of agave nectar and carob powder. I LOVE PANCAKES!!!
I try to have a green salad with lunch and/or dinner. It’s pretty basic, I usually don’t have a lot of time, so I just chop up green lettuce and two or three types of veggies. The white stuff is cauliflower, which is great when you put in a food processor, it comes out a little feta-cheese-like, and much more palatable, especially for small tummies.
