I asked Allyson to share some of her fave vegan gluten free summer recipes, & she was kind enough to oblige. Here she is with a tantalizing round-up of recipes for you to try this summer. (I’m so excited to try those hazelnut burgers!)

Today I’m sharing a few of my favorite vegan gluten free summer recipes. These delightful dishes are perfect for a potluck, a barbecue, or simply cooling down on a hot summer day.
Hazelnut Burgers with Roasted Tomatoes and Avocado
These hazelnut burgers are especially great for storing and using up throughout the week. And, they are sturdy enough to eat sans-bun, which comes in handy for those of us with multiple food allergies.
Purslane & Mint Pesto Vermicelli Salad
This cold noodle salad combines a lot of great flavors and textures to make the perfect summertime meal. It also includes one of my favorite garden guests, purslane.
Feel free to substitute fresh green peas, spinach or arugula for the purslane.
I created this recipe to celebrate the bounty of summertime, when many of the ingredients are prominent in our garden.
Peaches are a telltale sign of summer. The fragrant and fuzzy fruit appear just as the weather warms and the days grow nice and long.
Peach season–lucky for us–has already begun and will continue all the way through August.
Green Chickpea “Edamame” Pasta Salad
This pasta salad is packed with flavors that really highlight the subtly decadent taste of the green chickpeas: I’ve speckled it with kalamata olives, fresh apricots (which are perfectly in season right now), fresh parsley, and a special secret ingredient: fig balsamic (although any variety of balsamic vinegar will work beautifully).
