Hi Everyone!

Leanne here – the Holistic Nutritionist, allergy free food blogger + recipe artist behind HealthfulPursuit.com. I want to live in a world where every woman loves her body, food allergies are celebrated, and the word “restriction” isn’t in the dictionary.

Restriction is such a dirty word. When I think it, when I say it, I feel like I’m being limited from experiences. And; when it comes to food, restriction often makes me want things even more – you know, the classic, “I’m restricting my chocolate consumption”. Fast forward 2 hours and there’s Leanne, nestled on the couch drowning herself in chocolate.

But let’s get real – for one reason or another, many of our bodies cannot process foods the way other bodies can. Animal proteins, flavors, colors, dairy, nuts… It’s a challenge to remove them from our lives and feel like we’re not missing out on something.

Using food journaling as a tool (I’ve prepared this FREE multi-page food journal for you) I’ve learned that I do best without gluten, dairy, sugar and grains. But… everything has gluten, dairy, sugar and grains. How’s a girl to live?!

I’ve spent over 8 years transitioning to an eating style that works for me and my body and the key to living without the foods that irritate my system is to feel ABUNDANCE with every meal that I prepare. Instead of reminding myself of the things I can’t have, I look at the items that I can. Empowering myself with an arsenal of super tasty recipes has been the key to my happiness. Aaaand I think it could be for yours, too.

Popsicles are big in the summer – ice cream on a stick, sweet treats. They’re all laced with sugar, dairy and many of them have gluten. Sipping on a lemonade while everyone treats themselves to ice cream isn’t my idea of a good time.

Apple Pie Popsicle Recipe

Apple Pie Ice Pops

Recipe type: Vegan, Paleo, Gluten-free, Dairy-free, Refined sugar-free, Yeast-free, Corn-free, Grain-free, Egg-free

Prep time: 5 mins

Chill time: 8 hours

Total time: 8 hours 5 mins

Serves: 4-6 (depending on the size of your popsicle mold)

Apple pie a la mode, ice pop style! Minus the pie crust… but it’s not missed in this cool treat.

Ingredients

Cashew Cream Base

  • 1 cup water
  • 1/2 cup raw cashews
  • 1 tablespoon coconut nectar or 1 pitted medjool date
  • 1/2 tablespoon chia seeds
  • 3/4 teaspoon alcohol-free vanilla extract

Ice Pop Filling

  • 1 apple, sliced thin
  • 1⁄2 cup water
  • 1⁄2 teaspoon ground cinnamon
  • 2 tablespoon coconut nectar or raw agave nectar
  • 2 teaspoons almond or sunflower seed butter
  • 1⁄2 teaspoon vanilla extract

Instructions

Add cream base ingredients to the jug of your high-powered blender. Blend on high until smooth.

Fill each ice pop mold with cream base, halfway to the top of the fill line. Set aside.

Add sliced apple, water and cinnamon to a small frying pan and bring to a boil on medium-low heat. Once boiling, add coconut nectar, almond butter and vanilla extract. Cook for 1 minute, until thick.

Divide apple mixture between the ice pop molds. Cover with ice pop tops and transfer to the freezer to chill for 8 hours.
